  7. chicken stock - watch the video to see (can replace with shellfish or fish stock for fish)

Instructions

  1. Blanch Spinach and Parsley: Blanch your spinach and parsley, stalks included, then transfer into ice-cold water.
  2. Squeeze Out Excess Water: Squeeze out the excess water from the spinach and parsley.
  3. Make Roux: Into a small pan with some butter, add your flour and stir to form a paste.
  4. Add Liquids: Add the milk, whisking until smooth. Then add comfy garlic, chicken stock, salt, and Dijon mustard.
  5. Blend: Transfer the mixture into a blender with the blanched parsley and spinach. Blend until smooth.
  6. Finish with Lemon Juice: Add some lemon juice for acidity and blend again.
  7. Strain and Serve: Strain the sauce and finish it with a bit of seed oil. Serve with crusty bread or as a sauce for fish, chicken, or pork.
