Instructions
Prepare Vegetables: Rough chop the tomatoes, and place them in an oven dish with the red onions, garlic, rosemary, and basil. Drizzle with olive oil, add thyme, salt, and pepper, and finish with a splash of balsamic vinegar.
Roast Vegetables: Roast the vegetable mixture in a super hot oven until they are well cooked.
Blend Soup: Remove the herbs, then blend the roasted vegetables until smooth. Optionally add a little bit of cream to the blend.
Serve: Serve the soup with a dollop of creme fraiche, a sprinkle of parmesan, a few leaves of basil, and a drizzle of olive oil.
