Ingredients

  1. whiskey - 700 ml (about 700 ml of a 750 ml bottle, use a mid-range whiskey like Maker's Mark)
  2. cinnamon sticks - 8 sticks (cracked to release flavor)
  3. dried chili (habanero recommended) - 2 dried habanero chilies (adjust quantity depending on desired heat level)
  4. demerara sugar - 1/2 cup (add to taste, about half a cup used)

Instructions

  1. Prepare Ingredients: Crack 8 cinnamon sticks and add them to the whiskey bottle (about 700 ml).
  2. Add Chilies and Sugar: Add 2 dried habanero chilies and about 1/2 cup demerara sugar to the whiskey bottle.
  3. Infuse: Shake the bottle to mix ingredients well. Let the mixture sit for 1 week, shaking it about once a day.
  4. Strain and Bottle: After 1 week, strain the mixture back into a clean bottle, removing cinnamon sticks and chilies.
  5. Taste and Adjust: Taste the infused whiskey. If left longer (up to 2 weeks), the spice level increases significantly, but may become too intense.
