  3. peppercorns - watch the video to see
  4. cumin seeds - 1 tbsp (dry roast)
  5. fennel seeds - 1 tsp (optional, dry roast)
  6. ginger powder - watch the video to see (optional, if using fresh ginger, dry roast till slightly dried out)
  7. garlic powder - watch the video to see (optional, if using fresh garlic, dry roast till slightly dried out)
  8. salt - watch the video to see (add a little, dry roast)
  9. turmeric powder - watch the video to see (add after cooling down roasted spices)

Instructions

  1. Dry Roast Spices: Add coriander seeds, red chili, and peppercorns to a pan and dry roast slowly to activate the aromatic oils.
  2. Add Remaining Spices: Introduce cumin seeds and optional fennel seeds to the pan and continue to dry roast.
  3. Add Ginger and Garlic: If using fresh ginger and garlic, add now and dry roast until slightly dried out. Alternatively, use ginger and garlic powder.
  4. Cool and Blend: Let the roasted spices cool down, then add turmeric powder and blend into a fine curry powder.
