Instructions

  1. Prepare Chili Mix: In a heat-safe bowl, combine chili flakes, salt, sugar, white pepper, and room temperature oil. Adjust the spiciness by playing with the type of chili and its ratio to other ingredients.
  2. Prepare Aromatics: Cut ginger, red onion, and garlic. Then, smash shallots and star anise.
  3. Heat Oil: Heat your wok on high for about 30 seconds. Pour in a neutral oil and heat it to about 300 degrees Fahrenheit.
  4. Fry Ingredients: Add the prepared ingredients in steps, letting them fry for up to 15 seconds before adding the next. Stir fry constantly until well browned but not burnt.
  5. Combine with Chili Mix: Turn the heat down, scoop out all the solid pieces with a mesh strainer, and bring the oil back up to temperature. Ladle the hot oil into the bowl of chili mix, stirring in between each ladle.
  6. Finish: Finish off with a dash of sesame seeds and sesame oil.
