Ingredients

  1. Beef trotters (Paye) - 2 pieces (2 pieces)
  2. Boiling water - watch the video to see (as required for dipping and cleaning)
  3. Water - 2 liters or as required (for soaking and washing)
  4. Edible limestone (Khanay wala chuna) - 2 tablespoons (used for soaking to loosen dirt and reduce smell)
  5. Vinegar - 1 cup (optional) (optional substitute for edible limestone)
  6. Baking soda - 1 tablespoon (optional) (optional substitute for edible limestone)

Instructions

  1. Initial Washing: Thoroughly wash the beef trotters with water.
  2. Hair Removal by Boiling: Dip each beef trotter in boiling water for 15-20 seconds, then remove hairs using a knife by scraping.
  3. Repeat Hair Cleaning: Repeat dipping in boiling water and scraping with a knife until all hairs are removed.
  4. Burn Leftover Hairs: Burn any leftover small hairs on the stove and scrape them off with a knife.
  5. Char and Remove Hooves: Char the hooves on the stove, remove them, then scrape and clean with a knife.
  6. Thorough Washing: Wash the trotters thoroughly with tap water.
  7. Prepare Limestone Solution: In a large tray of water, add edible limestone and mix well.
  8. Soak Trotters: Soak the trotters in the limestone solution for 10-12 minutes.
  9. Final Washing: Remove trotters from the solution and wash thoroughly with tap water.
  10. Cut and Use: Cut the cleaned trotters into large pieces and use them as desired.
