Ingredients

  1. cooked, cold rice - 600g (1.32 lbs)
  2. peanut oil - 3 tbsp
  3. eggs - 4 (beaten)
  4. spring onions - 4 (thinly sliced)
  5. diced ham - 300g (0.66 lbs)
  6. sugar - 1/2 tsp
  7. MSG - 1/2 tsp (optional)
  8. white pepper - 1/2 tsp
  9. soy sauce - 2 tbsp

Instructions

  1. Heat Oil: Heat 1 tbsp of oil in a hot wok until it starts smoking.
  2. Cook Eggs: Quickly cook the eggs, then remove them from the wok and set aside. Add another tbsp of oil to the wok.
  3. Stir-fry Ham and Spring Onions: Toss in the diced ham and spring onions, stir-frying them briefly.
  4. Add Rice: Add the cold rice. Break it up and toss thoroughly to combine.
  5. Season: Sprinkle the MSG, sugar, and white pepper around the edges of the wok, then pour in the soy sauce. Toss everything well to evenly distribute the seasonings.
  6. Stir-fry Rice: Stir-fry the rice for 3-4 minutes, or until it starts to toast slightly and is heated through. If your burner is less powerful, this may take 6-7 minutes.
  7. Serve: Serve your delicious egg fried rice hot and enjoy!
