Instructions
Prepare the Vegetable: Place a pot on the heat and add a little bit of butter and oil. Start to caramelise or soften the vegetable of choice.
Use a Cartouche: Fold baking paper, measure the pot, cut it, and lay it on top of your vegetables. This slows the rate of evaporation and allows the steam to be evenly distributed while letting some of the heat escape.
Soften the Vegetable: Leave for about 10 minutes or until your vegetable of choice is soft to the touch.
Blend with Liquid: Use cream and milk, or chicken stock as a liquid. You can infuse your milk to add depth of flavour. Blend it all up until it's completely smooth.
Season: Season the puree with vinegar, salt, and pepper to taste.
