Instructions
Prepare Ingredients: Chop tomatoes and garlic finely. Quarter the tomatoes and remove the seeds. Do not discard the innards; place them in a sieve to create fresh tomato water.
Cook Onions: Heat a good amount of quality olive oil in a pan and add the onions. Cook until soft.
Add Garlic and Vodka: Add the garlic to the pan after the onions to prevent burning. Then, add a bit of vodka and let it evaporate quickly.
Add Tomatoes and Seasonings: Add the chopped tomatoes to the pan along with a good pinch of salt and a very good hit of black pepper. Stir in 5 or 6 tablespoons of pasta.
Add Herbs: Add a small amount of fresh thyme and a generous amount of fresh basil to the sauce.
Finish the Sauce: Finish the sauce with a good splash of olive oil for richness and fresh tomato water for a hit of fresh acidity.
