Instructions

  1. Prepare Ingredients: Cut the tomatoes, mushrooms, spring onions, ginger, and tofu into appropriate sizes.
  2. Saute Ingredients: In a pan, bring some oil to temperature and saute ginger slices, white parts of the green onion, diced tomatoes, the rest of the tomatoes, and the mushrooms about 30 seconds apart.
  3. Simmer Soup: Transfer the stir-fried ingredients into a large pot over high heat. Pour in chicken broth and water, then bring it to a simmer.
  4. Add Tofu and Boil: Add the tofu and let the soup boil for 10 minutes.
  5. Add Remaining Ingredients: Add some ketchup, then roughly beat some eggs and pour it into the pot while stirring. Flavor your soup further with salt, sugar, and sesame oil.
  6. Garnish and Serve: Garnish with green onions. Serve hot.
