Ingredients

  1. potatoes - 1 kilo (preferably Ager potatoes, about 1 kilo)
  2. clarified butter - watch the video to see (for cooking, plus extra for the pan)
  3. white onion - 1/2 (very thinly sliced)
  4. salt - to taste
  5. pepper - to taste

Instructions

  1. Prepare the Potatoes: Peel and grate the potatoes into a container. Squeeze out all the water from the grated potatoes using an old napkin or dishcloth to ensure a drier, crispier finish.
  2. Season the Potatoes: Season the dried, grated potatoes generously with salt and mix well.
  3. Form the Rösti: Add a layer of potatoes to a pan with clarified butter, add a layer of thinly sliced onions, season with salt and pepper, then top with another layer of potatoes. Press down to compact.
  4. Cook the Rösti: Cook on medium heat, focusing on crisping the edges. After 4 minutes, add more clarified butter around the sides and continue cooking for a total of about 45 minutes, flipping halfway through.
  5. Serve: Serve the rösti on a plate with fried eggs on top for a complete brunch dish.
