Ingredients

  1. vanilla pods - watch the video to see (exhausted vanilla pods, toasted and dried)
  2. powdered sugar - watch the video to see (preferably powdered sugar for easier mixing and use)

Instructions

  1. Prepare Vanilla Pods: Toast the saved vanilla pods and ensure the blender blade and bowl are dry.
  2. Initial Mixing: Place the dry toasted vanilla pods in the blender bowl and add half of the powdered sugar.
  3. Pulse Vanilla Pods: Pulse the blender until the vanilla pods begin breaking down, then stop and scrape down the sides.
  4. Add Remaining Sugar: Add the remaining powdered sugar and continue blending until the mixture turns into a fine gray powder.
  5. Sift Vanilla Sugar: Pass the freshly made vanilla sugar through a fine sieve (shininoa) to remove any larger pieces.
  6. Optional: Use Vanilla Bean: To open and use a vanilla bean, flatten it with the back of a knife, make a shallow lengthwise cut, and scrape out the vanilla seeds (caviar). Infuse the seeds and pod for 48 hours to maximize flavor extraction.
  7. Reuse Vanilla Pods: Rinse the used vanilla pods under water, cut into thin strips, dry them, and use as decoration for desserts, cakes, and pies.
