Ingredients

  1. sugarloaf cabbage - 1 (quartered)
  2. neutral oil - 1 tbsp (vegetable, canola, or peanut oil)
  3. sea salt - watch the video to see (to season)
  4. butter - 100 g (at room temperature)
  5. white miso - 1.5 tbsp
  6. mirin - 1 tbsp
  7. fried shallots - watch the video to see (to serve)

Instructions

  1. Preheat grill: Preheat a grill to medium-high heat.
  2. Prepare cabbage: Drizzle the cut sides of the quartered cabbage with neutral oil and season with sea salt.
  3. Grill cabbage: Place the cabbage cut side down on the grill and cook, turning occasionally, for 10-15 minutes until charred all over.
  4. Make miso butter: Combine butter and white miso in a medium bowl and beat with a spoon until completely mixed. Stir in mirin and mix again until the mixture comes together. Alternatively, use a mini food processor to combine.
  5. Apply miso butter and finish grilling: Spread the cut sides of the grilled cabbage with the miso butter. Place the cabbage outer curved side down on the grill and cook until the butter mixture melts through, about 5 minutes.
  6. Serve: Serve the grilled cabbage sprinkled with fried shallots.
