Ingredients

  1. fresh egg noodles - 300 grams (or thin dry noodles)
  2. Sodium Carbonate - 1/4 teaspoon (optional for alkaline noodles)
  3. baking soda - 3/4 teaspoon (optional if not sensitive to taste)
  4. frying oil - watch the video to see (for deep frying)

Instructions

  1. Boil Noodles: Bring water to a boil and cook noodles until done, then drain.
  2. Oil Noodles: Oil the noodles to prevent sticking and shape them in a round strainer.
  3. Deep Fry Noodles: Heat oil to 150C and fry the noodles until set, about 3 minutes.
  4. Second Fry: Increase oil temperature to 180C and fry until golden brown.
  5. Drain and Reserve: Drain the noodles and reserve for serving.
