Ingredients

  1. watermelon - 600 g or about 4 cups (blended and strained)
  2. watermelon juice - 2 cups (after straining)
  3. liquid smoke - 1/4 cup
  4. 70 million year old water - 1 cup (or regular water)
  5. brown sugar - 1 tbsp
  6. kosher salt - 1 tbsp
  7. soy sauce - 1 and 1/2 tsp (good quality)
  8. onion powder - to taste
  9. freshly cracked black pepper - 1 tbsp

Instructions

  1. Blend and Strain Watermelon: Blend the watermelon to get about 4 cups of puree. Strain it using cheesecloth to extract the juice, aiming for about 2 cups of watermelon juice.
  2. Combine Ingredients: To the watermelon juice, add 1/4 cup of liquid smoke, 1 cup of water, 1 tbsp of brown sugar, 1 tbsp of kosher salt, 1 and 1/2 tsp of soy sauce, onion powder to taste, and 1 tbsp of freshly cracked black pepper.
  3. Cook the Sauce: Bring the mixture to a boil over medium heat, stirring occasionally. Then, reduce the heat to the lowest setting and simmer, also stirring occasionally, until all the sugar has dissolved and the sauce has thickened.
