  4. bicarbonate of soda (baking soda) - watch the video to see (for velveting)
  5. flour - watch the video to see
  6. baking powder - watch the video to see
  7. corn flour - watch the video to see
  8. combo seasoning - watch the video to see (for finishing)
  9. mayonnaise - watch the video to see (for serving)

Instructions

  1. Prep the Squid: Scrub the squid with coarse salt and wash under cold running water.
  2. Start the Velveting Process: In 2 liters of water, add bicarbonate of soda to raise the pH and make the squid more alkaline. This prevents the proteins from bonding too tightly during cooking, making the calamari tender. Leave for 4 hours.
  3. Make the Dry Mix: Combine flour, baking powder, and corn flour in a bowl.
  4. Coat and Fry the Squid: Put the squid directly from the bicarbonate solution into the dry mix to coat. Fry for about 4 minutes until crispy.
  5. Finish and Serve: Finish off with combo seasoning and serve with mayonnaise.
