  4. cumin seeds - watch the video to see

  7. sugar - watch the video to see (good amount)
  8. chardonnay vinegar - watch the video to see
  9. watermelon - watch the video to see (roughly chopped)
  10. salt - watch the video to see (to taste)

Instructions

  1. Prepare Scotch Bonnet Chilies: Cover scotch bonnet chilies with oil, de-seed them, and add to an oven to get blistered.
  2. Sauté Aromatics: Dice the onion and add it to a pan along with cumin seeds, coriander seeds, and some garlic cloves. Sweat them down.
  3. Combine Ingredients: Add your cooked peppers, a good amount of sugar, and some chardonnay vinegar. Allow this to soften and reduce right down.
  4. Blend Sauce: Once reduced, put the mixture into a blender.
  5. Prepare Watermelon: Roughly chop the watermelon, add this to a thermo 2, and pass off the juice.
  6. Finalize Sauce: Put the watermelon juice into your sauce and blitz until smooth. Adjust the seasoning with salt.
  7. Bottle: Bottle the sauce and enjoy on crispy chicken tenders.
