Ingredients

  1. white vinegar - 1 cup (1 cup)
  2. chopped chili (red chili) - 1.5 tablespoons (1.5 tablespoons, finely chopped)
  3. chili paste - 6 tablespoons (6 tablespoons (adjust to taste for spiciness))
  4. white sugar - 1 cup (1 cup)
  5. canned crushed pineapple - 1/2 cup (1/2 cup)
  6. salt - 1 teaspoon (1 teaspoon)
  7. cornstarch - 1 tablespoon (1 tablespoon)
  8. water - 1/4 cup (1/4 cup)

Instructions

  1. Combine Ingredients: In a pot, combine white vinegar, finely chopped chili, chili paste, white sugar, crushed pineapple, salt, cornstarch, and water. Mix thoroughly until sugar and cornstarch are dissolved.
  2. Cook the Sauce: Place the pot on medium heat and stir continuously. Bring the mixture to a boil, then reduce heat to low.
  3. Simmer and Thicken: Simmer the sauce for 10 to 15 minutes, stirring occasionally, until the sauce thickens to desired consistency.
  4. Adjust Seasoning: Taste the sauce carefully (it will be hot). Adjust salt or chili paste to suit your preference for saltiness and spiciness.
  5. Cool and Serve: Allow the sauce to cool; it will thicken further as it cools. Serve as a dipping sauce for chicken, spring rolls, tempura, or other dishes.
