Ingredients

  1. garlic - 4 (cloves)
  2. cilantro stems - 1 bunch (rough chopped)
  3. sugar - 1 tablespoon
  4. kosher salt - 1 tablespoon
  5. black peppercorns - 1/4 teaspoon
  6. white pepper - 1/4 teaspoon
  7. dark soy sauce - 1 teaspoon
  8. light soy sauce - 2 tablespoons
  9. chicken wings - 1 lb
  10. rice flour - 1 cup
  11. fried shallots - watch the video to see (for garnish)

Instructions

  1. Prepare the marinade: In a blender, combine garlic, cilantro stems, sugar, kosher salt, black peppercorns, white pepper, dark soy sauce, and light soy sauce. Blend until smooth.
  2. Marinate chicken wings: In a medium bowl, combine the marinade with chicken wings. Mix well to coat and marinate.
  3. Coat with rice flour: Add rice flour to the marinated chicken wings and mix until thoroughly coated.
  4. Fry chicken wings: Fry the coated wings in hot oil for 3 to 5 minutes until golden, crunchy, and cooked through. Remove from oil and drain.
  5. Serve: Season with salt, plate, and garnish with fried shallots.
