- cilantro stems - 1 bunch (rough chopped)
- sugar - 1 tablespoon
- kosher salt - 1 tablespoon
- black peppercorns - 1/4 teaspoon
- white pepper - 1/4 teaspoon
- dark soy sauce - 1 teaspoon
- light soy sauce - 2 tablespoons
- chicken wings - 1 lb
- rice flour - 1 cup
- fried shallots - watch the video to see (for garnish)
Instructions
- Prepare the marinade: In a blender, combine garlic, cilantro stems, sugar, kosher salt, black peppercorns, white pepper, dark soy sauce, and light soy sauce. Blend until smooth.
- Marinate chicken wings: In a medium bowl, combine the marinade with chicken wings. Mix well to coat and marinate.
- Coat with rice flour: Add rice flour to the marinated chicken wings and mix until thoroughly coated.
- Fry chicken wings: Fry the coated wings in hot oil for 3 to 5 minutes until golden, crunchy, and cooked through. Remove from oil and drain.
- Serve: Season with salt, plate, and garnish with fried shallots.
