Ingredients

  1. pork belly - 240 grams (cut into half centimeter strips)
  2. salt - 1/4 teaspoon (for seasoning)
  3. soy sauce - 1/2 tablespoon (for marinating pork)
  4. oil - 2 tablespoons (for frying)
  5. honey - 1 teaspoon (mixed with water for glazing)
  6. water - 1 tablespoon (for glazing)
  7. chili powder - 1 tablespoon (vibrant red chili powder or Gochugaru)
  8. MSG - 1/4 teaspoon (for seasoning)
  9. dark vinegar - 3/4 teaspoon (for seasoning)
  10. scallion - to taste (chopped for garnish)
  11. noodles - 160 grams (thin alkaline egg noodles or wonton noodles)

Instructions

  1. Prepare Pork: Cut pork belly into half centimeter strips and mix with salt and soy sauce.
  2. Fry Pork: Coat pork with oil and add to a cool wok. Over medium flame, fry and render out the lard for about 20 minutes.
  3. Glaze Pork: Once crispy, strain and reserve rendered lard. Add pork back to wok, toss with honey and water, then blast over high flame for 15 seconds.
  4. Prepare Noodles: Boil noodles in water until done, about 2 minutes.
  5. Assemble Dish: Nestle noodles in a bowl, add seasoning sauce (salt, MSG, soy sauce, dark vinegar, water), and top with chili powder, scallion, and crispy pork.
  6. Finish with Lard: Heat reserved lard until smoking and drizzle over the assembled noodles. Mix well and serve.
