  3. ginger - 5 g
  4. garlic - 1 (large clove or two small cloves)
  5. green onion - 2
  6. spicy chili paste - 50 ml
  7. soy sauce - 30 ml
  8. rice vinegar - 20 ml
  9. water - 30 ml (to lighten the spiciness)
  10. cane sugar - 10 g
  11. ketchup - 40 ml
  12. honey - 20 ml (estimate)
  13. egg - 1
  14. cornstarch - 1 to 2 cups (for breading, approx.)
  15. peanut oil - as needed (for frying and sautéing)
  16. toasted sesame seeds - to garnish

Instructions

  1. Prepare Chicken: Cut chicken to desired size, season with spices.
  2. Marinate Chicken: Mix chicken with ginger and garlic, let marinate for 1 hour in fridge.
  3. Prepare Sauce: Combine spicy chili paste, soy sauce, rice vinegar, water, cane sugar, ketchup, and honey.
  4. Breading: Coat marinated chicken in egg, then cornstarch.
  5. Fry Chicken: Fry chicken in peanut oil at 160-170°C, then again at 190°C for crispiness.
  6. Finalize Sauce: Sauté garlic in peanut oil, add prepared sauce, then coat fried chicken in sauce.
