cashmir chili powder - 1 teaspoon
garam masala - 1 teaspoon
turmeric powder - 1/4 teaspoon
ginger powder - 1 teaspoon
gram flour (besan) - 1/2 cup
cornstarch - 1/4 cup
onion - 1/2 (grated)
egg white - 1 (from one egg)
water - 1/4 cup
curry leaves - 2 sprigs
kosher salt - 2 and 1/2 teaspoons
Instructions
Prepare the batter: In a medium mixing bowl, combine cashmir chili powder, garam masala, turmeric powder, ginger powder, gram flour, cornstarch, grated onion, egg white, water, curry leaves, and kosher salt. Whisk together until smooth.
Marinate chicken: Add chicken thigh strips to the batter and mix until fully coated.
Fry chicken: Drop the coated chicken strips into hot oil and fry for 3 to 4 minutes or until golden brown and delicious. Remove and drain off excess oil.
