Instructions

  1. Prepare Egg Mixture: In a bowl, combine chopped boiled egg whites, chopped garlic, chili powder, chopped ginger, garam masala, breadcrumbs, all-purpose flour, half an egg white, and salt. Mix well to create a binding mixture.
  2. Form and Fry Dumplings: Form the mixture into small dumplings. If needed, add more flour for proper binding. Deep fry the dumplings until they are golden and crispy. Set aside.
  3. Prepare the Sauce: Heat oil in a pan. Add chopped ginger, garlic, green chilies, and curry leaves. Stir in yogurt, chili sauce, Kashmiri chili powder (or chili powder mixed with red food coloring), a pinch of garam masala, and a pinch of sugar.
  4. Combine and Serve: Add the fried egg dumplings to the sauce in the pan. Toss well to coat. Increase the flame and let it sit for a minute to absorb the flavors and dry up slightly. Finish with a sprinkling of salt and chopped coriander. Serve hot.
