Ingredients

  1. octopus - 1 large (fresh or thawed)

  4. garlic butter - watch the video to see (for brushing)

Instructions

  1. Prepare the Octopus: Defrost the octopus under running water and cut off the heads and tentacles.
  2. Steam the Octopus: Steam the octopus at 85°C for 2 hours until tender.
  3. Sear on Plancha: Season with salt and pepper, then sear on a plancha or cast iron grill until crispy.
  4. Finish with Garlic Butter: Brush with garlic butter, lemon juice, and sprinkle with herbs before serving.
