Instructions
Prepare the Cod: Dry off your cod fillet and season lightly.
Sear the Cod: Lay the cod face down in a hot pan with oil, applying a tiny bit of weight to ensure even contact. Sear until a golden crust forms.
Oven Finish: After searing, take the rawness off the bottom of the cod, then transfer to a preheated oven. Cook for 2 minutes at a moderate temperature.
Rest and Serve: Baste the cod with butter or lemon juice, let it rest for 2 to 3 minutes, then season with salt and pepper before serving.
