Ingredients

  1. vermicelli (sohun) - 60 g (60 grams)
  2. red bird's eye chili (cabai rawit merah) - 4 pieces (4 pieces, sliced)
  3. garlic - 3 cloves (3 cloves, chopped)
  4. cabbage - 50 g (50 grams, cut into cubes)
  5. spring onion - 1 stalk (1 stalk, sliced)
  6. eggs - 2 (2 eggs)
  7. salt - 1 1/4 tsp (1/4 teaspoon for egg mixture plus 1 teaspoon for soup)
  8. cornstarch - 1 tbsp (1 tablespoon)
  9. water - 700 ml + 2 tbsp (2 tablespoons for cornstarch mixture plus 700 ml for soup)
  10. oil - 2 tbsp (2 tablespoons for cooking)
  11. chili sauce (saus sambal) - 1 tbsp (1 tablespoon, optional)
  12. oyster sauce (saus tiram) - 1 tbsp (1 tablespoon)
  13. chicken broth powder - 1 tsp (1 teaspoon)
  14. granulated sugar - 1/2 tbsp (1/2 tablespoon)
  15. MSG - 1 tsp (1 teaspoon, optional)
  16. black pepper - 1/8 tsp (1/8 teaspoon)
  17. chili powder (gochugaru or cabai bubuk) - watch the video to see (to taste, for color and spiciness)

Instructions

  1. Prepare egg mixture: In a bowl, mix cornstarch and water until dissolved. Add sliced spring onion, eggs, and 1/4 teaspoon salt. Stir well.
  2. Cook eggs: Heat a little oil in a pan, pour in the egg mixture, cook until set. Remove and set aside on the side of the pan.
  3. Sauté aromatics: Add a little more oil to the pan, sauté chopped garlic until fragrant and slightly browned.
  4. Cook vegetables and broth: Add cabbage and sliced red bird's eye chili, sauté briefly. Then add water and bring to a boil.
  5. Add vermicelli and seasonings: Add vermicelli, chicken broth powder, salt, MSG (if using), sugar, black pepper, and oyster sauce. Cook briefly.
  6. Add chili powder and chili sauce: Add chili powder (gochugaru or cabai bubuk) and chili sauce (optional). Cook briefly to combine flavors.
  7. Finish and serve: Serve the spicy egg soup vermicelli hot, garnished with lime wedges and fried shallots.
