Prepare chili and garlic paste: In a mortar and pestle, add dried red chillies, garlic cloves, and Thai red chillies. Crush well and set aside.
Sauté onion: In a frying pan, heat cooking oil and add chopped onion. Sauté on medium flame for 1 minute.
Cook chili and garlic paste: Add the crushed garlic and chili paste to the pan. Mix well and cook for 1 minute.
Cook chicken mince: Add chicken mince to the pan and mix well until the color changes.
Add seasonings: Add Himalayan pink salt, crushed black pepper, and caster sugar (optional). Mix well and cook on medium flame for 2-3 minutes.
Add sauces and water: In a jug, mix water, soy sauce, oyster sauce, fish sauce, and dark soy sauce. Pour into the frying pan, mix well, and cook on high flame for 3-4 minutes.
Add basil leaves: Add fresh basil leaves, mix well, and cook on high flame for 1 minute.
Serve: In a serving dish, place boiled rice, top with the prepared chicken mince, and finish with a fried egg on top. Serve immediately.
