Ingredients

  1. dried red chillies (Sukhi lal mirch) - 2-3 (2-3 pieces)
  2. garlic cloves (Lehsan) - 4-5 (4-5 cloves)
  3. Thai red chillies - 2-3 (2-3 or as required)
  4. cooking oil - 2-3 tbs (2-3 tablespoons)
  5. onion (Pyaz) - 1 small (1 small, chopped)
  6. chicken mince (Chicken qeema) - 400 g (400 grams)
  7. Himalayan pink salt - 1/2 tsp (½ teaspoon or to taste)
  8. black pepper crushed (Kali mirch) - 1 tsp (1 teaspoon)
  9. caster sugar (Bareek cheeni) - 1/2 tsp (½ teaspoon (optional))
  10. water - 1/4 cup (¼ cup)
  11. soy sauce - 1 tbs (1 tablespoon)
  12. oyster sauce - 1 tbs (1 tablespoon)
  13. fish sauce - 1/2 tsp (½ teaspoon)
  14. dark soy sauce - 1/2 tsp (½ teaspoon)
  15. fresh basil leaves - handful (handful)
  16. boiled rice (Chawal) - watch the video to see (to serve)

Instructions

  1. Prepare chili and garlic paste: In a mortar and pestle, add dried red chillies, garlic cloves, and Thai red chillies. Crush well and set aside.
  2. Sauté onion: In a frying pan, heat cooking oil and add chopped onion. Sauté on medium flame for 1 minute.
  3. Cook chili and garlic paste: Add the crushed garlic and chili paste to the pan. Mix well and cook for 1 minute.
  4. Cook chicken mince: Add chicken mince to the pan and mix well until the color changes.
  5. Add seasonings: Add Himalayan pink salt, crushed black pepper, and caster sugar (optional). Mix well and cook on medium flame for 2-3 minutes.
  6. Add sauces and water: In a jug, mix water, soy sauce, oyster sauce, fish sauce, and dark soy sauce. Pour into the frying pan, mix well, and cook on high flame for 3-4 minutes.
  7. Add basil leaves: Add fresh basil leaves, mix well, and cook on high flame for 1 minute.
  8. Serve: In a serving dish, place boiled rice, top with the prepared chicken mince, and finish with a fried egg on top. Serve immediately.
