Ingredients

Instructions

  1. Prepare the Scallops: Hold the scallop with fingers and thumb on the back, finding the gap halfway into the scallop. Open it up and use a spoon to remove the muscle, which is sweet and should not be discarded.
  2. Release the Scallop: Use the sharp end of your spoon at the point where the scallop joins the shell. Pull towards you and lightly release it with your hands.
  3. Chop the Muscle and Coral: Chop up the connected muscle and coral, which are both delicious and should be used.
  4. Cook the Scallops: On a high heat, sear the scallops until they get a lot of color on one side. Once a beautiful crust has formed, turn them over. They won't need long on this side.
  5. Finish with Butter: Take the scallops off the heat and add a little bit of butter for flavor.
