Ingredients

  1. crushed tomatoes - 400 g
  2. onion - 2 (divided for sauce and topping)
  3. garlic clove - 1
  4. olive oil - variable (plus extra for dough, bowl, baking pan, and topping)
  5. tomato paste - 2 tablespoons
  6. granulated sugar - 1 tablespoon for sauce (for sauce and dough)
  7. dried oregano - 2 tablespoons (divided for sauce and topping)
  8. water - 100 g for sauce (for sauce and dough)
  9. salt - to taste (for sauce and dough)
  10. pepper - to taste
  11. water at room temperature - 250 g (for dough)
  12. dry yeast - 1 teaspoon
  13. hard flour - 400 g
  14. tomato - 1 (for topping)
  15. green pepper - 1
  16. olives - 50 g
  17. fasting grated cheese - 200 g
  18. fasting white cheese - 200 g
  19. semolina - as needed (for the pan)

Instructions

  1. Make the Tomato Sauce: In a frying pan, add olive oil, chopped onion, and minced garlic. Sauté until caramelized. Add salt, pepper, sugar, tomato paste, crushed tomatoes, water, and oregano. Mix well and cook for 10 to 15 minutes until thickened.
  2. Prepare the Dough: In a mixer, combine water, dry yeast, and sugar. Let the yeast activate. Add olive oil, salt, and hard flour. Mix with a dough hook for 10 to 15 minutes. Transfer the dough to an oiled bowl, cover, and let it rise until doubled in size.
  3. Assemble the Pizza: Preheat the oven to 200°C. Divide the dough in half for two pizzas. Spread each piece on an oiled and semolina-dusted baking pan. Spread tomato sauce, then add fasting grated cheese, sliced tomatoes, onions, green peppers, olives, and fasting white cheese. Drizzle with olive oil and sprinkle oregano.
  4. Bake: Bake at 200°C for 20 to 30 minutes until the crust is golden and crispy. Serve hot.
