Ingredients

  1. potatoes - 3 large (peeled and diced large)
  2. red onion - 1 (finely diced)
  3. coriander - a small bunch (finely sliced)
  4. ground cumin - 1 tsp
  5. pani puri masala or chaat masala - 1 tsp
  6. chilli powder - 1/2 tsp
  7. ground black pepper - 1 tsp
  8. salt - 1/2 tsp
  9. puris - 30
  10. oil - as needed (for frying)

Instructions

  1. Prepare Aloo Filling: Boil the potatoes in salted water with a generous pinch of salt until tender, then drain well and return them to the pot along with the rest of the ingredients. Mash and mix well.
  2. Fry Puris: Heat the oil to 180°C (356°F) and fry the puris for 3-4 minutes or until they have puffed up and turned golden brown.
  3. Assemble Pani Puri: Make a hole in the puris, add a teaspoon of the potato filling, then dip into the sauce of your choice.
