Ingredients

  1. avocado oil - 2 tablespoons
  2. shallots - 1 (large or 2 medium, small diced)
  3. garlic cloves - 5 (small diced)
  4. Fresno chilis - 1 1/2 (small diced)
  5. coconut milk - 1 1/2 cups
  6. peanut butter (crunchy) - 3/4 cup
  7. dark soy sauce - 2 tablespoons
  8. sweet soy sauce or kecap manis - 2 tablespoons (sub with regular soy sauce)
  9. lime juice - 2 tablespoons

Instructions

  1. Prepare Ingredients: Dice the shallots, garlic cloves, and Fresno chilis into small pieces.
  2. Cook Shallots: In a medium heat pot, add avocado oil and cook the shallots for about 7 minutes or until slightly golden brown.
  3. Add Garlic and Chilis: Add garlic and cook for a minute, then add the diced chilis and cook for another minute.
  4. Combine Remaining Ingredients: Add coconut milk, peanut butter, dark soy sauce, and sweet soy sauce (or regular soy sauce). Mix well.
  5. Thicken Sauce: Heat the mixture until it thickens. If the sauce is too thick, add a little water to reach desired consistency.
  6. Finish with Lime Juice: Finish the sauce by stirring in lime juice.
