  2. soy sauce - 1 teaspoon
  3. rice vinegar - 1/2 tablespoon
  4. sesame oil - 1/2 to 1 teaspoon
  5. sugar - 1/2 teaspoon (optional)
  6. chili oil - 1 teaspoon
  7. garlic - 2 cloves (chopped finely)
  8. hot water - 2 to 3 tablespoons
  9. noodles - 200 grams/7 ounces (wide flat noodles recommended)
  10. peanuts - to taste (crushed for topping)
  11. green onions - to taste (also known as longans, chopped for topping)
  12. chili crisp - to taste (for topping)

Instructions

  1. Prepare Peanut Sauce: In a bowl, combine peanut butter, soy sauce, rice vinegar, sesame oil, sugar (optional), chili oil, and finely chopped garlic. Mix well.
  2. Adjust Consistency: Add 2 to 3 tablespoons of hot water to the peanut sauce mixture to achieve the desired consistency. Mix thoroughly.
  3. Cook Noodles: Boil the noodles in a pot of water until they are palatably bendy, about 6 minutes. Drain and set aside.
  4. Combine and Serve: Toss the cooked noodles with the peanut sauce until evenly coated. Serve topped with crushed peanuts, chopped green onions, and a spoonful of chili crisp.
