  3. tahini - 4 tbsp (sesame paste)
  4. salt - to taste (to taste)
  5. sesame oil - 1 tsp (adds nutty flavor)
  6. lemon juice - 2 tbsp (freshly squeezed)
  7. Greek yoghurt - 4 tbsp (adds creaminess)

Instructions

  1. Roast Eggplants and Garlic: Roast eggplants and garlic in the air fryer until the eggplants are caramelized and soft, removing moisture and developing smoky flavor.
  2. Prepare the Eggplant Mixture: Scrape the roasted eggplant flesh into a bowl. Add roasted garlic, tahini, salt, sesame oil, lemon juice, and Greek yoghurt.
