  4. cornstarch - watch the video to see (for coating)
  5. cooking oil - watch the video to see (for frying)
  6. snow peas - watch the video to see (destringed)
  7. cooking wine - watch the video to see (a splash)

Instructions

  1. Prepare Snow Peas: Destring snow peas.
  2. Season Tilapia: Season both sides of the tilapia fillets with white pepper and garlic salt, rubbing the seasoning in with your hands.
  3. Coat with Cornstarch: Add cornstarch to coat both sides of the fillets for a crispy exterior.
  4. Blanch Snow Peas: Add some oil to boiling water, then add the snow peas. After 30 to 40 seconds of blanching, remove them from the water.
  5. Fry Tilapia: Heat a stainless steel pan on high, add oil, then gently add the tilapia fillets by hand to avoid oil splashing. Let one side brown for about 3 minutes before gently moving it. Flip the fillets and repeat on the other side.
  6. Add Cooking Wine: After both sides have browned, add a splash of cooking wine, turn off the heat, and cover the pan for 30 to 40 seconds.
  7. Final Cooking: Uncover, turn the heat back on to crisp up the exterior for a final 30 to 40 seconds of pan frying.
  8. Serve: Plate the fish atop the blanched snow peas.
