  3. cornflakes - watch the video to see (very fine ground, or panko or fine breadcrumbs)
  4. Knorr Vegetarian (spicy) - watch the video to see (optional)
  5. flour - 1/2 cup
  6. water - 1/4 cup
  7. egg - 1
  8. salt - 1/4 teaspoon
  9. black pepper - 1/4 teaspoon
  10. paprika - 1/4 teaspoon
  11. cumin - 1/4 teaspoon
  12. coriander - 1/4 teaspoon

Instructions

  1. Prepare Eggplant: Soak sliced eggplant in water with a large spoon of salt for 20 to 30 minutes.
  2. Prepare Coating Mixture: Mix ground cornflakes or breadcrumbs with optional Knorr Vegetarian spice. In another plate, mix flour, egg, water, salt, black pepper, paprika, cumin, and coriander.
  3. Coat Eggplant: Drain and dry eggplant slices. Dip each piece first into the liquid mixture, then coat with the cornflakes mixture.
  4. Cook Eggplant: Choose either to air fry at 180°C for 10-15 minutes, bake in the oven at 200°C for 20 minutes with olive oil, or fry in oil until golden and crispy.
  5. Prepare Ranch Sauce: Mix a spoonful of light mayonnaise, a spoonful of yogurt (regular or Greek), one clove of chopped garlic, juice of half a lemon, parsley (or dill), and a sprinkle of salt and black pepper.
