grapeseed oil - 2-3 tablespoons (or any cooking oil)
soy sauce - 2 tablespoons
lime - 1/2 (juiced)
green onion - 1 (chopped)
onion - watch the video to see (minced, a little bit)
jalapeno - watch the video to see (optional, sliced)
sugar - 1/2 teaspoon
Instructions
Prepare the Sauce: Mix soy sauce, lime juice, chopped green onion, a little bit of minced onion, jalapeno (optional), and sugar. Set aside.
Grate the Potato and Onion: Grate one large potato and approximately 1/4 cup of onion.
Mix Batter: To the grated potato and onion, add 1/4 teaspoon salt and 1/4 cup potato starch. Mix well.
Cook the Pancake: Heat 2-3 tablespoons of grapeseed oil in a nine-inch pan. Pour the batter and spread evenly. Cook until the bottom is crunchy and golden brown, approximately 10 minutes, flipping as needed.
Serve: Serve the pancake warm with the prepared sauce. The pancake can be for one or two servings.
