Ingredients

  1. large potato - 1 (peeled and cleaned)
  2. salt - 1/4 teaspoon
  3. onion - 1/4 cup
  4. potato starch - 1/4 cup
  5. grapeseed oil - 2-3 tablespoons (or any cooking oil)
  6. soy sauce - 2 tablespoons
  7. lime - 1/2 (juiced)
  8. green onion - 1 (chopped)

  11. sugar - 1/2 teaspoon

Instructions

  1. Prepare the Sauce: Mix soy sauce, lime juice, chopped green onion, a little bit of minced onion, jalapeno (optional), and sugar. Set aside.
  2. Grate the Potato and Onion: Grate one large potato and approximately 1/4 cup of onion.
  3. Mix Batter: To the grated potato and onion, add 1/4 teaspoon salt and 1/4 cup potato starch. Mix well.
  4. Cook the Pancake: Heat 2-3 tablespoons of grapeseed oil in a nine-inch pan. Pour the batter and spread evenly. Cook until the bottom is crunchy and golden brown, approximately 10 minutes, flipping as needed.
  5. Serve: Serve the pancake warm with the prepared sauce. The pancake can be for one or two servings.
