Ingredients

  1. parsley powder - 2 tablespoons (dehydrated parsley with stems)
  2. dried oregano - 1 tablespoon (for flavor)
  3. ground cumin - 1/2 tablespoon (for spice)
  4. garlic powder - 1/2 tablespoon (for flavor)
  5. smoked chili powder - 1/2 tablespoon (for heat)
  6. salt - 1 tablespoon (to taste)
  7. vinegar - 1 tablespoon (for rehydrating)

Instructions

  1. Dehydrate Parsley: Place whole parsley on a tray and dehydrate in the oven at 120ºC until completely dried.
  2. Blend Parsley: Blend the dehydrated parsley and strain to get parsley powder.
  3. Mix Chimichurri Ingredients: Combine parsley powder, oregano, cumin, garlic powder, chili powder, and salt in a bowl.
  4. Rehydrate Chimichurri: Add vinegar and olive oil to the dry mixture to create a paste.
