Ingredients

  1. egg yolks - 3 (from small eggs)
  2. butter - watch the video to see (watch the video to see)
  3. salt - a pinch (a pinch)
  4. lemon - squeeze (just a squeeze)
  5. hot water - 1 spoonful (a spoonful)

Instructions

  1. Prepare Egg Yolks: Crack egg yolks into a bowl.
  2. Brown the Butter: Heat butter in a pan until it browns, noting that the browner it gets, the nuttier the flavor.
  3. Mix Ingredients: Add a pinch of salt and a squeeze of lemon to the egg yolks. Incorporate a spoonful of hot water.
  4. Whisk: Whisk the mixture. It should hold its shape when lifted with the whisk. If it sinks too quickly, continue whisking. If it gets too hot, remove from heat but continue whisking.
  5. Combine with Browned Butter: Off the heat, slowly pour the browned butter into the egg mixture, avoiding the black bits at the bottom of the pan.
