Ingredients

  1. olive oil - 1 tbsp (1 tablespoon)
  2. beef mince - 500g (500 grams)
  3. sea salt - watch the video to see (to season)
  4. white onion - 1 (diced)
  5. red capsicum (bell pepper) - 1 (diced)
  6. garlic cloves - 4 (crushed and chopped)
  7. chipotle in adobo - 230g (one jar, approximately 230 grams)
  8. chopped tomatoes - 400g (one 400g can)
  9. soy sauce - 1 tbsp (1 tablespoon)
  10. smoked paprika - 1 tbsp (1 tablespoon)
  11. black beans - 400g (one 400g can, rinsed and drained)
  12. water - 250ml (1 cup (250 ml))
  13. spring onion greens - watch the video to see (sliced, to garnish)
  14. steamed rice - watch the video to see (to serve)
  15. lime wedges - watch the video to see (to serve)

Instructions

  1. Heat oil and brown beef: Heat olive oil in a heavy-based frying pan on medium-high heat. Add beef mince, spread around the pan, season with sea salt, and leave to brown for about 5 minutes.
  2. Add vegetables: Break up the beef with a wooden spoon, scraping all the fond from the base of the pan. Add diced onion, red capsicum, and chopped garlic. Cook for 2 minutes, stirring until softened.
  3. Add seasonings and beans: Stir in chipotle in adobo, chopped tomatoes, soy sauce, and smoked paprika. Add rinsed and drained black beans and water. Bring to a boil.
  4. Simmer: Reduce heat and simmer for 10-15 minutes until the sauce reduces and thickens.
  5. Serve: Serve the chili over steamed rice, garnished with sliced spring onion greens and lime wedges.
