Instructions

  1. Prepare the couscous: Spread semolina flour out in a tray. Mix salt and water in a spray bottle and spray a little at a time over the semolina. Gently rub in circular motions to form tiny couscous balls. Sieve the couscous to ensure even grains.
  2. Steam the couscous: Pour the couscous into a cotton or muslin-lined sieve. Place over boiling water and cook for 10 to 15 minutes, fluffing up at intervals.
  3. Cook the aromatics: Heat oil in a pan and cook diced onions until translucent. Stir in minced garlic and grated ginger.
  4. Cook the chicken with spices: Add cubed chicken to the pan along with salt, black pepper, curry powder, rosemary and thyme mixture, buan powder, and paprika. Cook until the chicken is browned.
  5. Add vegetables and simmer: Stir in diced tomatoes, bell peppers, and scotch bonnets. Simmer for a few more minutes.
  6. Combine couscous and chicken mixture: Mix the steamed couscous into the chicken and vegetable mixture until everything is perfectly coated.
  7. Finish and garnish: Stir in green onions and garnish with parsley before serving.
