  7. Caribbean green seasoning - 2 tablespoons (a blend of herbs and spices, about 2 tablespoons)
  8. ground roasted jeera (cumin) - watch the video to see (to taste, used along with char masala)

  10. curry powder - 2.5 tablespoons (homemade or favorite brand, about 2.5 tablespoons)

Instructions

  1. Prepare the base: Heat 1.5 tablespoons of vegetable oil in a non-stick pan over medium-high heat. Add chopped onion and about 12 cloves of minced garlic. Stir quickly without lowering the heat to allow the flavors to bloom.
  2. Add spices and seasoning: Add half a scotch bonnet pepper (with seeds if you like it spicy), fresh ground black pepper, 2 tablespoons of Caribbean green seasoning, ground roasted jeera (cumin), char masala, and 2.5 tablespoons of curry powder. Stir well to combine and cook for a few minutes to develop the flavors.
  3. Add chicken wings: Add the 3 lbs of cleaned chicken wings cut into drums and flats to the pan. Increase the heat slightly to sear and coat the wings thoroughly with the curry base.
  4. Add water and cook: Pour in 1.5 cups of water and add salt to taste. Bring to a boil, then reduce heat to maintain a simmer. Cook uncovered for about 12-18 minutes, or until the wings are fully cooked and the sauce has thickened to your liking.
  5. Finish and garnish: Turn off the heat and stir in about 2 tablespoons of chopped shadow benny (cilantro). Adjust seasoning if needed. Serve hot, optionally with roti or your preferred side.
