  2. red onions - 2 small (thinly sliced)
  3. fresh parsley - 1 tbsp (finely chopped)
  4. fresh basil - 1 tbsp (finely chopped; can substitute with dill)
  5. garlic - 1 large clove (finely chopped or grated)
  6. extra virgin olive oil - 4 tbsp
  7. fresh lemon juice - 1 tbsp (freshly squeezed)
  8. apple cider vinegar - 1 tbsp
  9. salt - to taste

Instructions

  1. Prepare Tomatoes and Onions: Wash tomatoes thoroughly and cut into bite-sized pieces. Thinly slice the red onions. Place both in a bowl.
  2. Add Fresh Herbs and Garlic: Add finely chopped parsley, basil (or dill), and finely chopped or grated garlic to the bowl with tomatoes and onions.
  3. Make the Vinaigrette: In a small bowl, whisk together extra virgin olive oil, fresh lemon juice, apple cider vinegar, salt, chili flakes (optional), and honey (optional) until well combined.
  4. Combine Salad and Dressing: Pour the vinaigrette over the tomato mixture. Gently toss the salad to combine, being careful not to break the tomatoes and lose their juice.
