Ingredients

  1. dates - watch the video to see (pitted and soaked until soft)
  2. red wine vinegar - 1/2 teaspoon (for acidity and tang)
  3. mustard - 1/2 to 1 teaspoon (adds mustiness and flavor)
  4. garlic - 1 clove (one clove, finely minced)
  5. black pepper - a pinch (fresh cracked)
  6. olive oil - 1/4 cup (good quality, added slowly to emulsify)

Instructions

  1. Soak Dates: Place pitted dates in a cup and soak them in water for about 10 minutes until they are nice and soft.
  2. Combine Vinegar and Mustard: Add red wine vinegar and mustard to a mixing bowl. Use 1/2 teaspoon of each, or up to 1 teaspoon of mustard if you prefer a stronger flavor.
  3. Add Garlic and Pepper: Add one clove of minced garlic and a pinch of freshly cracked black pepper to the mixture.
  4. Blend Dates into Mixture: Add the soaked dates to the bowl and blend or mix until smooth.
  5. Emulsify with Olive Oil: Slowly add the olive oil while continuously mixing or using an immersion blender to emulsify the sauce. The mixture will separate initially but will come together as you blend.
  6. Bottle and Store: Once emulsified and smooth, bottle the sauce and store it for use as a versatile condiment.
