fresh lime juice - 3/4 oz (freshly squeezed)
sugar snap pea syrup - 3/4 oz (made from simmering sugar snap peas, water, and raw sugar)
egg white - watch the video to see (for frothing, substitute for 'whites of an unborn chicken')
Instructions
Make Sugar Snap Pea Syrup: Wash sugar snap peas and break them into pieces. Combine equal parts water and raw sugar in a pot with the peas. Simmer for about 15 minutes to create the syrup.
Prepare Cocktail Mix: In a shaker, combine 1 oz mezcal, 1 oz green chartreuse, 3/4 oz freshly squeezed lime juice, and 3/4 oz sugar snap pea syrup.
Add Egg White and Dry Shake: Add egg white to the shaker. Dry shake (shake without ice) to froth the mixture.
Wet Shake and Strain: Add ice to the shaker and shake again. Double strain the cocktail into a glass.
Garnish and Serve: Garnish with a skewer of sugar snap peas and serve immediately.
