Soak Vermicelli, Shrimp, and Mushrooms: Soak the bean vermicelli, dried shrimp, and dried mushrooms in warm water until softened.
Prepare Vegetables: Peel and julienne a carrot. Cut red onions, green onion, and garlic. Julienne some celery and Napa cabbage.
Drain and Cut Mushrooms and Shrimp: After rehydration, drain and cut the dried mushrooms and drain the dried shrimp.
Cut Vermicelli: Make a couple of cuts into the vermicelli noodles to prepare them for frying.
Stir-Fry: Heat oil in a wok, add garlic, shrimp, and mushrooms, and stir-fry. Then add green onion, Napa cabbage, celery, and carrots. Stir-fry for a few minutes.
Season: Add some shrimp water, salt, sugar, light soy sauce, oyster sauce, and dark soy sauce to season.
Add Vermicelli and Combine: Add the vermicelli noodles and mix everything until well combined.
Final Stir-Fry: Add green and red onions, stir-fry everything together before adding sesame oil to finish.
