Ingredients

  1. plantain flour - 1 cup + 3 tbsp (measure 1 cup + 3 tbsp)
  2. chili flakes - 1/2 teaspoon (use Scotch Bonnet or regular chili flakes)
  3. paprika - 1 teaspoon (adds color and flavor)
  4. salt - pinch (optional)
  5. warm water - 1 and 1/2 cups (measure 1 and 1/2 cups)

Instructions

  1. Prepare the Batter: In a large bowl, add the plantain flour, chili flakes, paprika, and optional salt. Mix well.
  2. Add Water: Gradually add warm water and mix until you have a crepe-like batter that coats the back of a spoon.
  3. First Bake: Pour half the mixture onto a baking tray lined with a silicone mat and spread it evenly. Bake in a preheated oven at 200°C for 10 minutes.
  4. Cool and Cut: Once baked, let it cool slightly, then peel off the mat, trim the edges, and cut into squares.
  5. Second Bake: Place the squares back on the tray upside down and bake for another 30 minutes until firm and crunchy.
  6. Cool Completely: Allow the crackers to cool completely before enjoying.
