Instructions

  1. Prepare Ingredients: Slice scallions, green and red bell peppers, shred cabbage, mince ginger, cut chicken into bite-sized pieces, peel and devein shrimps.
  2. Coat Chicken: Coat chicken pieces with egg white and cornstarch.
  3. Cook Chicken and Shrimp: Heat olive oil in a wok or large pan over medium-high heat. Stir-fry chicken until cooked through. Add shrimp and cook until pink and opaque. Remove and set aside.
  4. Stir-fry Vegetables: In the same pan, add more olive oil if needed. Stir-fry ginger, scallions, bell peppers, and cabbage until tender-crisp.
  5. Add Noodles and Sauce: Add cooked lo mein noodles to the pan with vegetables. Add oyster sauce, soy sauce, sesame oil, salt, and pepper. Toss everything together to combine well.
  6. Combine Protein and Serve: Return cooked chicken and shrimp to the pan. Toss everything together until heated through. Serve hot.
