Instructions

  1. Marinate the shrimp: In a bowl, combine shrimp with baking soda, sesame oil, white pepper, and salt. Mix well with hands and set aside to marinate briefly.
  2. Prepare vegetables and aromatics: Chop green onions, separating whites from tops. Mince garlic. Have frozen vegetables ready.
  3. Cook the shrimp: Heat oil in a wok or large skillet until shimmering. Add shrimp in a single layer and cook until they turn pink and curl into a C-shape, about 1-2 minutes per side. Flip and sauté briefly. Remove shrimp and set aside.
  4. Scramble the eggs: Add a bit more oil to the wok. Crack in two eggs and scramble quickly until just cooked. Push eggs to the side.
  5. Cook vegetables and aromatics: In the empty space, add green onion whites and garlic. Sauté briefly until fragrant.
