Ingredients

  1. onion - 1 (diced)
  2. zucchini - 1 (diced)
  3. green onion - 1 bunch (sliced, for green onion oil)
  4. black bean paste - to taste
  5. soy sauce - a little (Korean, for fragrance)
  6. starch - to thicken (mixed with water)
  7. MSG - a pinch (optional)
  8. pork belly - to taste (sliced)
  9. sugar - 1 teaspoon (optional, to taste)
  10. water - as needed
  11. noodles - as needed (knife-cut or any preferred type)
  12. cucumber - 1 (julienned, for garnish)

Instructions

  1. Prepare Green Onion Oil: Fry sliced green onions in abundant oil until fragrant, then remove.
  2. Cook Pork and Vegetables: In the green onion oil, sauté pork belly, diced onion, and zucchini. No salt needed as black bean paste adds saltiness.
  3. Add Sauces and Seasonings: Add a little Korean soy sauce for fragrance, black bean paste, and optional sugar. Mix well.
  4. Add Water and Boil: Pour water to cover the ingredients and bring to a boil. Adjust sweetness with sugar if desired.
  5. Thicken with Starch: Mix starch with water and add to the sauce to thicken.
  6. Prepare Noodles: Cook noodles according to package instructions, rinse to remove excess starch.
  7. Serve: Place noodles in a bowl, top with the black bean sauce, and garnish with julienned cucumber.
