Instructions

  1. Prepare Rice: Wash and cook the rice.
  2. Marinate Chicken: Cut chicken breast into slices, then cubes. Marinate with cornstarch, salt, and water, mixing by hand.
  3. Marinate Shrimp and Scallops: Cut already peeled shrimp in half horizontally and marinate with cornstarch and white pepper. Marinate the scallops the same way.
  4. Cut Vegetables: Cut the carrot, garlic, ginger, and green onions.
  5. Create Sauce: Mix together oyster sauce, light soy sauce, dark soy sauce, chicken bone powder, sugar, white pepper, and cooking oil.
  6. Cook Eggs and Rice: Crack and beat two eggs in a bowl. Heat oil in a hot wok and then add the eggs followed by the rice. Season with salt and light soy sauce. Add some green onions then plate it.
  7. Stir Fry: In the same wok, add oil then garlic and ginger. Then add everything else one at a time, stir frying constantly.
  8. Finalize Sauce: Add boiling water and the sauce. Then add a potato starch slurry to thicken it.
  9. Serve: Ladle the sauce onto the fried rice and serve.
